A $50 non refundable but transferable deposit is required to secure a place.

Vegetarian Cookery Classes near Byron Bay

Nadine offers this series of entertaining, innovative, information packed and sophisticated cookery classes from her award winning home in Mullumbimby near Byron Bay in northern NSW. Even if you are not a vegetarian the recipes and techniques shown will provide a most delicious and welcome addition to your cooking repertoire. Nadine's firm grounding in the cooking of the Middle East, Eastern Mediterranean, Italy and France is reflected in her writing and teaching. It also informs the finesse and originality of her recipes.

Modern Middle Eastern

Become familiar with the spicing of the middle east and eastern Mediterranean and learn to use saffron, cumin, paprika, coriander, caraway, preserved lemons, rose and orange blossom waters, as well as pomegranate molasses, in a way relevant to a refined modern palate.

Learn to make spice mixtures, sauces and chutneys including Chermoulah, Harissa, Ras al Hanout and use these to create both simple and exotic specialities as well as elaborate feasts, Pilafs and Tagines and the famous Moroccan "Couscous Royal" .

With a focus on Thai cooking, this class concentrates on the well loved and scintillating flavours of Asia - Lemongrass, Limes and Kaffir Limes, Galangal and Ginger, Coriander and Coconut to name but a few. We use pestle and mortars (for sale in the class or bring your own) to create the basis of Thai Green and Red Curries, Chiang Mai Curry, Massaman Curry, as well as vibrant salads and dressings.

Focus on France

Learn to use wonderful but often neglected vegetables such as fennel, celeriac, artichokes and even inject new life into staples with delicious gratins, sautees, fricasses, braises and fine soups.

Christmas Gift Class

We make gorgeous little boxes, sachets, jars and punnets of chocolate brandy truffles, florentines, nougat, chocolate marzipans, jams and shortbreads, all of which you can take home or give away as gifts.

Gorgeous Italian

Learn to make your own pasta and your own gnocchi.

Please bring an apron. Knives and boards are supplied, but bring your own knife if you prefer.

As a safety precaution, please wear closed shoes.
